Recipes Lately: A Tomato Tart, Strawberry Scones, & More

I love to see what others are cooking and baking.  It helps give me ideas.  So, here's a bit of what we've been cooking/baking lately...

We've always got a pan of roasted veggies going.  I just drizzle a little olive oil on them, and then I add garlic and some kosher salt and black pepper.  I cook it at 450 degrees for 25-30 minutes and broil it for 2-3 minutes, and voila!  So easy.
This is Pioneer Woman's Petite Vanilla Scone recipe.  But, I didn't make them petite :) 
We've also been making a ton of breakfast breads.  I just have a hard time throwing away bananas. So, my little helper helped me to mash them.


I've tried many banana bread recipes.  We like this one a lot.  We've also made a chocolate one.  I'm a big fan of oatmeal banana bread.  But, this day, we made my mom's recipe!



Then, we throw in a Blue Apron about once a month (I have a discount code coming soon for anyone who wants to try it).


The kids love when we make smoothies.  Ours are simple: frozen fruit, a banana, some apple juice (or whatever I have on hand), and some vanilla almond milk.
I tried a tomato tart for the first time last week.  It was really, really easy and tasty!  It will be even better with homegrown tomatoes this summer!  I made mine from this Ten Dollar Dinners cookbook, but here is a somewhat similar recipe.




And, to finish off this post, we made these strawberry scones.  Again, with oatmeal.  They were great!
