Apple Bread: Baking with the Boys

I haven't baked with the boys in quiet some time.  So, last week, when Carter was studying the letter A, we decided to make some apple bread.  I didn't taste it (darn whole30), but it made the house smell heavenly, and it looked really moist.  I'll pulling the recipe back out as soon as this cleanse is over.

Each of the boys got a few turns at dumping something in the bowls.

Then, they all had a chance to stir.

Carter even helped John Paul so it wouldn't spill, and my heart melted.

All in all, it was a fun change of pace for the boys while Sophie napped, and it's something I want to pick back up again.  There's nothing like seeing the fruits of your labor, and while we made this for a friend, the boys begged for a taste.  So...a friend will get it the next time around!

Apple Oatmeal Bread
(adapted from recipe here)

2 C. flour
1 C. old fashioned oats
1/4 t. salt
2 t. cinnamon
2 t. baking powder
1 C. sugar
3/4 C. vegetable oil
2 eggs beaten
1/2 C. sour cream
1 C. applesauce
1.2 t. vanilla

Glaze
1 C. powdered sugar (or more)
1/4 t. cinnamon
1 T. butter (softened)
1/2 t. vanilla
1/4 C. maple syrup

Preheat oven to 350 degrees.  Grease loaf pan.

In a large bowl combine all of the dry ingredients.

In another bowl, mix remaining ingredients.  Then stir into dry ingredients until just combined.

Pour into loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Remove from oven, and whisk together the glaze.  Pour over the top of the bread and let cool.

Voila!
