Have you ever been to The Bongo Room in Chicago? If so, you know why I'm dedicating a post to their pancakes. If not, get.there.as.soon.as.you.can. Seriously, they serve white chocolate pretzel pancakes. And, they are life-changing good. Now, I'm not typically a white chocolate lover. But, they've changed me. They are the perfect combination of sweet and salty, and really, they're just fabulous! My sister is the one who discovered them and in turn, made my family fans.
She knows all of the good places!
But, when you're more than a hundred miles from Chicago and not going there anytime in the next week or so, sometimes you just have to find something else that will suffice.
I heard that it was national pancake day (what isn't there a national day for?) a week or so ago, and so my husband and I thought it would be our chance to do it up. Why not try to make the best specialty pancakes we've ever tasted?! Luckily, I found a copycat recipe here.
And while it wasn't Chicago, and it wasn't quite the same, these pancakes were so, so good. It's as close as we are going to get to the real thing in the foreseeable future, so they're staying on our menu!
You won't regret making these. Really.
