Oatmeal Lace Cookies

Right before Christmas, my grandmother made some cookies that my husband raved about!  Typically he is a chewy/almost doughy cookie lover, but this one is crispy!  She gave me the recipe over the holidays and we finally got around to making them.

He "read" me the recipe and said it called for two tablespoons of Coca-Cola.  That would have been interesting!
 Someone has a mouthful of nuts...

These were really easy to make, and the whole family (even John Paul) loves them.  They're one of those cookies that might be even better served with a hot cup of coffee.

Oatmeal Lace Cookies

1/2 C. butter
1 1/2 C. quick rolled oats
3/4 C. sugar
1 t. baking powder
1/2 t. salt
2 t. vanilla
1 egg
1 C. chopped nuts

Melt butter and pour over oats.  Add sugar, baking powder and salt.  Stir well.  Add vanilla to beaten egg and mix with all ingredients.  Add nuts.  Place walnut sized balls on parchment paper lined baking sheet. Bake at 350 degrees for 10 minutes.  Let cool before removing from parchment paper.
