Pumpkin Crunch

We were planning to go to Mimi and Pops' house for Thanksgiving, but those plans changed after last week. We're just having Thanksgiving as a family of five (almost six) and trying to re-create a few of the dishes we would have had there.  

We're trying a turkey (almost makes me gag thinking about it).  I don't know why but I have the hardest time cooking raw birds.  The look, feel, smell of it all.  Yuck, yuck, yuck.  My poor grandchildren someday when they come to our house for holidays - I'll probably be ordering pizza!

We're doing Mimi's jalapeno cornbread stuffing, a loaf of bread, and mashed potatoes and gravy to go with it.

For dessert, we made Mimi's pumpkin crunch (the boys were a big help)!

The boys were so proud of their dessert, and I know we'll all be after we have a piece.  We have so, so much to be thankful for, and I hope you do, too!

  1. Mmmm…jalapeƱo cornbread stuffing! Boy, I wish I could convince my family to go with something that good! But my daughters-in-law make the Thanksgiving dinner, and they're traditionalists (unfortunately not of the Southwestern variety), so we end up with the yams with marshmallows and bread stuffing, which I can't even eat, being gluten sensitive. Ah well, at least I know that SOMEONE had some tasty stuffing for Thanksgiving!
