Caramel Marshmallow Popcorn


Sunday night, my sweet sister-in-law texted me a link to a recipe that I just had to try.  Instantly. This caramel marshmallow popcorn.  

It's so easy.  There are six ingredients and it takes less than 15 minutes from start to finish.  That can be both good and bad.

Basically, you make the bag of popcorn (or your own on the stove).
Then, you mix the remaining ingredients on the stove.  
When it's smooth and blended, you pour the mixture over the popcorn, and voila!
 Delectable!

Ingredients:
1 package of microwave popcorn, popped
1/2 C. butter
1 C. brown sugar
2 T. light corn syrup
1/2 t. vanilla
12 large marshmallows (or 156 mini marshmallows)

Instructions:
1.  Pop popcorn and remove any unpopped kernels
2.  Melt butter in medium saucepan over low heat.
3.  Add the remaining ingredients.
4.  Turn to medium heat and stir until marshmallows are melted and mixture is smooth.
5.  Pour over popcorn and stir until evenly coated.
6.  Store in airtight container.

  1. Hmm, so who gets to count out 156 little marshmallows? I'd bet you have a few volunteers in your household...
